Will’s First Haircut + Non-Scale Victory!

What a fabulous Sunday Fun Day today was! It all began with breakfast in front of the TV (a true rarity) because my parents were re-finishing the kitchen table. Then we headed off to mass, which is getting more & more interesting as Will becomes more active & vocal. Thank goodness for Cheerios & dry erase books! 

After mass, Will went down for a quick nap & once his daddy arrived, we headed off for Will’s first haircut! I just had to snap a picture before waking him up because, come on, look at him! He sleeps just like his mommy!
 
While he didn’t exactly need a haircut quite yet, he had a long bunch of hair on top of his head & a growing rat tail of hair at the nape of his neck so we agreed he needed a trim!  

We took him to Kid O Cuts & I’m so, so glad we did! They have a slide in the waiting area & then when it’s your turn to bring your kid back, you select a movie for them to play on a TV right in front of the car seats. By car seats I mean literally seats that are cars. So cute!

  
The hairdresser (I guess that’s what her job title would be?) was so great with Will, even when he threw a fit over the hair trimmers. He wasn’t a fan of the loud buzzing sound.

  
But oh my gosh did our little boy look so handsome after his first trim!  

  
He loved the cars so much he wanted to sit in another one before we left. What a cutie! 

Kid O Cuts was great & even gave us a certificate with his picture & a little Baggie of his hair to remember his first haircut! He also got a balloon & a sucker, & you can just imagine how excited he was about that!

After his haircut we headed to the Science Museum, because I have a pass that let us get in free one Sunday. Will had an absolute blast!

  

We were there for a couple of hours before saying goodbye to Daddy & heading home for dinner with Gram & Grandad. This time we are outside. Don’t worry, our eating situation will be back to normal tomorrow!

To top off a great day, Will was pretty tired so we snuggled up to watch Diary of a Wimpy Kid before Will went to bed & Mommy took a bubble bath.

Oh & about that non-scale victory I mentioned in the headline? Guess who fit into an old pair of jeans for the first time since before Will was born! That would be me!!  

  
Now I just have to continue down this path to better health, emotionally & physically & there will only be more non-scale victories to come!

4th of July Weekend Update + Fried Avocado Tacos Recipe

Will and I had an absolutely wonderful, relaxing 4th of July weekend! Friday I was ready to get out of the house for a bit before I had to work at 2:00, so we went over to the local water company’s reservoir so Will could see it for the first time. I know you’re thinking it’s a bit strange to take him there of all places, but it’s a beautiful area with a walking path all around it. Will especially loved the ducks that were swimming in the reservoir. You could tell by his constant “quack quack” noises!


We then headed home and Will took a nap while I got work done. Once I finished, we goofed around for a while and then I looked up some recipes to try for dinner. What I came across was this recipe for fried avocado tacos. It’s from Color Me Meg, a blog that I absolutely adore! I thought I would change it a bit to make it my own, but what a great inspiration for dinner! Check out my version below!

Fried Avocado Recipe

Ingredients

  • 1 avocado
  • 2 eggs – beaten
  • Approximately 10 saltine crackers – crushed
  • 1/2 C flour
  • Vegetable oil

Directions

  1. Pour oil into a medium-sized saucepan until it’s about one inch deep – heat to about 350 degrees
  2. Slice avocado in half and then into slices
  3. Place flour, cracker crumbs, and eggs into three separate bowls
  4. First coat avocado with flour, then eggs, and then the cracker crumbs
  5. Carefully place into the oil and fry until golden about 10-15 seconds on each side
  6. Remove from oil and sit on paper towel to drain excess oil

Once I fried up the avocado, I added them to tacos along with ranch, black beans, corns, lettuce, and shredded cheese. It was an absolute hit in my book, although Will just had a cheese quesadilla with black beans and corn. He didn’t know what he was missing with that avocado!

Happy 4th of July!

To celebrate the holiday, Will’s dad came down and we grilled out burgers and hot dogs, and ate them along with baked beans and french fries. We sat outside on the back patio and enjoyed the meal which was great since it wasn’t too hot!

After we finished dinner we headed to Homemade Pie and Ice Cream Kitchen, which is definitely our favorite Louisville ice cream parlor, and got some dessert. Will gobbled up Daddy’s chocolate chip ice cream, while I enjoyed a brownie sundae with caramel chip ice cream!

We then headed down to the waterfront and the walking bridge to walk around a bit before finding a spot to watch the fireworks. Will kept dropping his jaw in awe at the fireworks which I found to be hilarious. I’m so glad he’s not scared of the sound because it makes it so much more enjoyable!


Then Sunday we went to Frisch’s for their breakfast bar, another one of our favorites, before relaxing for the rest of the day. It really was an easy going, enjoyable holiday. I hope you had a great one as well!

Weekend Update + Yummy Cheesy Savory Oatmeal Recipe

Better Late Than Never!

So it’s already Tuesday and I’m just now posting about our weekend, but as I, and I’m sure my mother, have always said, better late than never!

So Saturday was a pretty lazy day and we both ended up enjoying a morning nap. My little superman woke up a bit dazed but definitely refreshed! It’s hard to tell in the picture, but his adorable Superman shirt has a removable cape on the back. It’s definitely one of my favorites and was actually a hand-me-down from my cousin!

I didn’t take many pictures throughout the afternoon but pretty much the only exciting thing to happen was our trip to GiGi’s Cupcakes to split a red velvet cupcake. Oh my goodness was it absolutely delicious but oh so rich! I wouldn’t have been able to finish the cupcake myself so good thing I had my little wiggle-worm right there with me to share!

Watching American Pharoah Go For The Triple Crown

After enjoying some pizza for dinner, we settled in to watch the Belmont Stakes to see if American Pharoah will bring home the Triple Crown. Being from Louisville, Kentucky, we knew we couldn’t miss this race! It had been like 37 years since a horse last won the Triple Crown and American Pharoah had a great shot at the title! When 6:50 rolled around we were all eyes and ears on the screen, clapping and cheering “GO! GO! GO!”

In case you haven’t already heard, he did win! He ended the dry spell of Triple Crown winners and took home the prestigious horse racing crown!

The Fault In Our Stars: A Sob Fest

Will and I spent the rest of the night cuddling and goofing around before he went to bed. After I said goodnight, I plopped back down on the recliner and watched The Fault in Our Stars for the first time. I don’t want to say it was a mistake, but I was absolutely sobbing all by myself watching the movie. It was a great movie but it was easily one of the saddest I’ve seen!

Sunday Breakfast + Savory Oatmeal

Relaxing Sunday Morning

Usually on Sunday’s my mom makes a big breakfast for the family consisting of biscuits, eggs, and either bacon or sausage. But my family was out of town helping with the Special Olympics, so it was just Will and I. He enjoyed his usual banana with some cereal, while I sipped on my coffee and checked out my updated BlogLovin feed! I then decided to try a brand new recipe.

I had heard of Martha Stewart’s savory oatmeal before but never thought it to be something I would enjoy. However, given how healthy it is and how hungry I was, I thought I’d give it a shot. I was surprised by how much I enjoyed the recipe. You can find the recipe below!

Cheesy Savory Oatmeal2

Savory Cheesy Oatmeal Recipe Ingredients

  • 1/4 C quick-cooking oats
  • salt & pepper – to taste
  • 1/4 C shredded cheddar cheese
  • 1 egg – cooked over-easy
  • dash of cayenne pepper

Savory Cheesy Oatmeal Recipe Directions

  1. Cook oatmeal according to package directions
  2. Season with salt & pepper
  3. Cook egg over medium heat until whites are done but yolk is still runny
  4. Sprinkle cooked oatmeal with shredded cheese
  5. Top with cooked egg
  6. Shake cayenne pepper over-top
  7. Enjoy!

We then spent a lot of the rest of the day outside, with Will in his favorite swing next to Gram’s! He’ll even point to the swing and say “wheee!” when he wants to go outside and get in it!

Overall we had a pretty relaxing, enjoyable weekend. Did you do anything fun or did you have more of a lazy couple of days like we did?
